Mise en place

“Mise en place” a French culinary phrase for “everything in its place” is a simple but very useful method all professional chefs use for saving time, avoid making a mess in the kitchen and make their workflow a little easier. So “mise en place” is the setup required before you start to cook. For this recipe, the mise en place is pre-heat the oven at 180 C (on fan force mode), line tray with baking sheet and weigh all the ingredients.
Ingredients
1 ¼ cups plain flour
½ tsp baking powder
¼ tsp sea salt
65g unsalted butter (room temperature)
1 cup panela or brown sugar
1 egg
1 tsp vanilla extract
¾ cups chocolate chips
Directions
Step 1 – Preheat oven at 180C. Line tray with baking sheet.
Step 2 – Place flour, baking powder and salt together in a medium bowl. Add butter and sugar in the flour mixture and mix with hands.
Step 3 – Add the egg, vanilla extract and mix well with a fork and finish mixing with your hands.
Step 4 – Use your hands to bring the dough together.
Step 5 – Add the chocolate chips to the dough mixture and mix thoroughly. We use both milk and dark chocolate chips.
Step 6 – Shape the dough into a log. This will help to portion the cookies consistently.
Step 7 – Shape the dough in balls; don’t flatten them. You don’t have to make them into perfect round shapes.
Bake cookies for 10 minutes or until brown. Transfer the cookies on a cooling rack.
This will yield 15 cookies.
