Bouquet Garni = small bundle of herbs. It is used to add flavour and spice to a dish. Great for stocks, sauces or soups! The main place people go wrong is by cutting their butcher’s twine too short!

1. Cut all your ingredients into roughly the same size.

2. Bundle your herbs together and then use the celery pieces as a casing on the outside.

3. Wrap the butcher’s twine around the bundle many times until you get to the end.

4. Tie the ends into a knot.

This ensures you can easily remove the fibrous parts and throw them away. It helps to pull it out and taste it to make sure you are done with it.
