VIVE Cooking Tips: How To Process Fresh Herbs


Chef Jodie teaches you how to chop fresh herbs without bruising them and losing flavour.

  1. Place a clean, damp chux under your chopping board to stop it from moving around while you chop.
  2. Pick the leaves by pulling upwards.
  3. Place them on top of each other in a bundle without bending them (and therefore without bruising them).
  4. Chop and use immediately!
