VIVE Cooking Tips: How To Make A Basic Veggie Stock

What you need:

  • Carrots
  • Leeks
  • Fennel
  • Parsley
  • Peppercorns
  • Fennel Seeds
  • Brown Onions (peeled)
  • Bay Leaf
  • Thyme

When making stock you can use a lot of the off-cuts that you would normally throw away such as carrot peels or the stalks of the parsley.

All you need to do is:

  • Cover with water
  • Bring to the boil 
  • Simmer for at least 20 minutes
